Zucchini Bread

3 cups Flour
1 teaspoon Salt
1 teaspoon Bake Soda
1 teaspoon Baking Powder
1 Tablespoon Cinnamon
3 Eggs
1 cup Veggie Oil
2 1/4 cups Sugar
1 Tablespoon Vanilla (optional)
2 cups grated Zucchini
1 cup Walnuts

Grease and flour two 8x4 bread pans.  

Preheat oven to 325.

In a medium bowl combine flour, salt, baking soda, baking powder, and cinnamon.

In a large bowl beat eggs, oil, vanilla, and sugar.  

Add flour mixture to egg mixture and beat well.  Stir in Zucchini and nuts until well combined.  

Pour batter into prepared pans.

Bake for 50-60 minutes or until toothpick inserted comes out clean.  Cool in pan on rack for 20 minutes.  Remove bread from pan, and cool completely.  

Serve slices with soft butter!

Hobo Joes oven style


1 lb Kielbasa, sliced 1/4 inch

4 medium Red Potatoes, sliced 1/4 inch
1 lb Carrots, sliced 1/4 inch
1 Onion, sliced 1/4 inch
6 Garlic cloves, minced
1 Tablespoon Kosher Salt
1-2 teaspoon Pepper
1-2 teaspoon Paprika
2 Tablespoons Oil
1 Tablespoon Worcestershire Sauce

Preheat oven to 400.

In a large mixing bowl combine all ingredients.

Spread Hobo Joe mixture onto a jelly roll pan evenly. 

Bake for 1 hour stirring every 20 minutes till done.  You can tell doneness by how cooked the sausage is. 

Note: You can add anything you like:
ground sausage
ground beef
cubed chicken
broccoli
cauliflower
A-1 steak sauce
