Granny Girl Soup

1 lb. Ground Beef
1 Onion, chopped

4 Cups Beef Broth
1 can (8 oz) Tomato Sauce
2 cans (6 oz) Spicy V8
1 can Diced Tomatoes
1 lb diced Carrots
4 medium Potatoes, diced
2 Celery stalks, chopped
1 (12 oz. bag) Green Beans, cut into 1 inch pieces
2 teaspoon Worcestershire Sauce
2 Bay Leaves
2 teaspoons Salt
1/2 teaspoon Pepper
1/2 teaspoon Thyme
1/4 teaspoon Marjoram
1/4 teaspoon Garlic Powder

1/4 cup Butter
2 stalks Celery, chopped
1/2 onion, chopped

1 1/2 cup Chicken Broth
1 box Chicken Stove Top Stuffing
1 cup Frozen Corn
2 Tablespoons Tomato Paste

In a soup pot brown beef and onion, drain. Set aside in a bowl.

In the same soup pot combine all Yellow ingredients. Bring to a boil. Reduce heat, cover, and simmer for 30 minutes.

While soup is simmer make the stuffing by melting the butter in a saucepan.

Sauté celery and onions until tender.

Add chicken broth and bring to a boil.

Stir in stuffing, cover, remove from heat and let sit for 5 minutes.

Heat oven to 375.

Transfer stuffing to an oven safe dish.

Bake for 20 minutes or until top starts to get crunchy.

When soup has finished simmering for 30 minutes, stir in corn and heat through.

Remove 1/2 cup of broth from soup. Combine with meat mixture and Tomato Paste. Stir meat mixture into soup to thicken.

Note: You can also add in any vegetable you like. For example: peas, cauliflower, etc...

Tomato, Spinach, Feta Pizza

 


1/2 recipe of Homemade Pizza Dough
Olive Oil
1 Clove Garlic, thinly sliced
1 cup Fresh Baby Spinach
1 1/2 cups shredded Mozzarella
1 large Beefsteak Tomato, sliced
1 Roma Tomato, sliced (optional)
2 Tablespoons shredded Parmesan Cheese
2 Tablespoons Fetta, crumbled
1/2 teaspoon Dried Oregano

Kosher Salt


After you have par-baked your crust for 3 minutes, you can make your Tomato, Spinach, Feta Pizza.

Top pizza in this order: Brush with more olive oil, layer with: garlic slices, spinach, mozzarella, tomatoes, parmesan, feta and oregano.

Bake for 10-15 more minutes.

Sprinkle with Kosher Salt and drizzle with Olive Oil.

Homemade Pizza Dough

2 1/4 teaspoon Yeast
4 cups Flour
1/2 Tablespoons Kosher Salt (+ a pinch)
1 1/2 cups lukewarm Water



Add yeast, bread flour, kosher salt, and water to a large bowl.  Set timer for 5 minutes and 30 seconds.  Immediately, stir dough mixture with a fork until it cleans the sides of the bowl.  Gather up all dough pieces and knead on a lightly floured surface till your timer goes off.

Shape into a ball. Place ball back in large bowl and drizzle some Olive Oil on top. With your hand spread in over the whole ball of dough. Cover and let rise for 1 hour.

Transfer to a lightly floured surface and divide the dough in half.

You can either bake the Pizza now or place the dough in zip lock bags.  Make sure all the air is squeezed out of the bags.  Store in Fridge for up to a week.

Notes:
- Before putting dough in the freezer, be sure to transfer the fresh dough to an air tight container . The dough will stay good in the freezer for up to 3 months

- To thaw frozen dough quickly: leave dough out
on the counter for at least 2 hours. This will allow the dough to thaw all the way through and come to room temp.

Homemade Spiced Applesauce

 10 Apples, peeled, cored, cut into chunks (mix varieties optional)

1/2 cup Sugar

1/2 cup water

1 teaspoon Cinnamon

1/2 teaspoon ground Ginger

1/2 teaspoon Nutmeg

1/4 teaspoon ground Cloves


Add all ingredients to the slow cooker.  Mix well.  Cook on high for 4 hours.  Wisk mixture to break up apple chunks.  Cool applesauce completely before storing in the fridge.

Duck Burgers

2 packages of Ground Duck meat (~12oz each)
2 Eggs
1 packet of Lipton Onion Soup Mix
1/4 cup Butter, softened
1 cup Italian Style Bread Crumbs
2 Tablespoons Worcestershire Sauce
2 sheets of wax paper or parchement paper
Bbq sauce - KC Masterpiece
9 slices Pepper Jack Cheese
9 Hamburger Buns
Guacamole
    3 Avocados
    1/4 cup cilantro, diced
    2 fresh Limes, juiced
    1 Jalepano, half seeded, minced
    1 teaspoon Adobo seasoning
Grilled Onions
    2 Onions, sliced 
    2 Tablespoons butter 
    2 Tablespoons olive oil
lettuce
Pickles
Mayo
Ketchup
Mustard
Tomatoes slices

In a large mixing bowl combine duck, eggs, onion soup mix, butter, bread crumbs, and Worcestershire sauce.  

Tear the wax paper into squares big enough to fit your patties.  I normally get about 9 patties from 1.5 lbs. of meat.
Place patty shaper ring on top of wax paper squares and spray lightly with PAM.

Using a kitchen scale measure out patties, I measure out 1/4 lb. or 4 oz.  Form patties with patty shaper and place on a jelly roll pan.  I will need two pans to hold 9 patties.

Cook patties on grill.  Brushing both sides with Bbq sauce.  When patties are almost done put pepper jack cheese on to melt.  
Serve with buns, guacamole, grilled onions, lettuce, pickles, mayo, ketchup, mustard, tomatoes slices, etc.
