2 packages of Ground Duck meat (~12oz each)

9 slices Pepper Jack Cheese
9 Hamburger Buns

1 Jalepano, half seeded, minced
1 teaspoon Adobo seasoning

2 Onions, sliced

In a large mixing bowl combine duck, eggs, onion soup mix, butter, bread crumbs, and Worcestershire sauce.
Tear the wax paper into squares big enough to fit your patties. I normally get about 9 patties from 1.5 lbs. of meat.
Place patty shaper ring on top of wax paper squares and spray lightly with PAM.
Using a kitchen scale measure out patties, I measure out 1/4 lb. or 4 oz. Form patties with patty shaper and place on a jelly roll pan. I will need two pans to hold 9 patties.
Cook patties on grill. Brushing both sides with Bbq sauce. When patties are almost done put pepper jack cheese on to melt.
Serve with buns, guacamole, grilled onions, lettuce, pickles, mayo, ketchup, mustard, tomatoes slices, etc.
